Coloured Meringue and Chocolate Shell

A crunchy, colourful meringue base hides a regressive rice pudding, mixed with a candy strawberry ganache and pieces of stewed strawberry. The whole pastry is topped with a decorated white chocolate shell for a trompe-l'oeil effect.
