September is back-to-school time, and chef François Perret has got in on the fun by dreaming up two Ritz au Lait that will send even the most grown-up of us back to childhood! His Strawberry Candy Ritz au Lait takes us back to our school notebooks.
Back to School Delight :
Coloured Meringue and Chocolate Shell
A crunchy, colourful meringue base hides a regressive rice pudding, mixed with a candy strawberry ganache and pieces of stewed strawberry. The whole pastry is topped with a decorated white chocolate shell for a trompe-l'oeil effect.
